Ciambella
Ingredients
3 eggs
180g sugar
150ml extra virgin olive oil 200g mascarpone
100ml apricot jam
150g flour
150g ground almonds 10g baking powder
pinch of salt
zest of 1 lemon
Method
- Preheat the oven to 180°C.
- Butter and flour a 23cm round ring tin.
- Whisk the sugar into the eggs until thick and pale.
- Slowly drizzle in the olive oil whilst stirring. Stir through the mascarpone and jam.
- Finally, add the dry ingredients into the mixture and fold carefully to combine.
- Pour the cake mixture into the cake tin, place in the oven and bake for 35-40 minutes, or until done. Test by inserting a skewer which should come out clean.
- Turn the cake out of the tin on to a rack while still warm.
