As the River Cafe opens its new venue, the River Cafe Cafe, founder Ruthie Rogers shares a recipe for a traditional Italian breakfast treat

Ciambella

Ingredients

3 eggs
180g sugar
150ml extra virgin olive oil 200g mascarpone
100ml apricot jam
150g flour
150g ground almonds 10g baking powder
pinch of salt
zest of 1 lemon

Method

  1. Preheat the oven to 180°C.
  2. Butter and flour a 23cm round ring tin.
  3. Whisk the sugar into the eggs until thick and pale.
  4. Slowly drizzle in the olive oil whilst stirring. Stir through the mascarpone and jam.
  5. Finally, add the dry ingredients into the mixture and fold carefully to combine.
  6. Pour the cake mixture into the cake tin, place in the oven and bake for 35-40 minutes, or until done. Test by inserting a skewer which should come out clean.
  7. Turn the cake out of the tin on to a rack while still warm.
